Vegetable Wednesday 

Lately we have been experimenting with getting a veg box. We got one years ago,  but found we just weren’t eating them and so we cancelled. However, now my life is largely home based we thought it was worth a try. Particularly as I have been becoming quite worried about plastic packaging, and shopping at the supermarket it’s just impossible to avoid. Of course, as can be seen in the picture, there is still plastic, but it is at least less of it. Anyway, my thoughts on plastic are for another day.

Today is about what Abel and Cole have brought us this week. We have:

  1. Apples
  2. Bananas
  3. Tomatoes
  4. Lettuce
  5. Potatoes
  6. Beans
  7. Red onions
  8. Plums
  9. Broccoli 

And, as I used a voucher, free eggs in a super cute box.

The thing about a veg box is it takes a little more thought in terms of what to do with it all. Particularly when you get things that aren’t your go-to. For me this includes red onions and potatoes. Apples, bananas and plums are easy enough to deal with – we can just eat them! We clearly need meals with beans and broccoli, again, not much to worry about there.

That leaves me with tomatoes, lettuce, potatoes and red onions to navigate. I guess a salad… maybe as a side dish? The red onions will have to be cooked though, I can’t stand them raw!
